Ingredients

Buckwheat and Spelt Pancakes

  • 180 grams dry buckwheat kernels
  • 180 grams Spelt grain
  • 1 tsp ground cinnamon
  • 1 pinch sea salt
  • 80 grams Shredded coconut
  • 2 free range eggs
  • 50 grams Grapeseed Oil
  • 300 grams rice milk
  • 1 heaped teaspoon Baking Powder (optional)
  • Grapeseed oil for cooking
  • Maple Syryp, to serve
  • yoghurt, to serve
  • mixed berries, to serve

Recipe's preparation

    Buckwheat and Spelt Pancakes
  1. Weigh buckwheat and spelt grain into TM bowl. Mill on speed 10 for 60sec.

    Add in cinnamon, sea salt, coconut, eggs, milk, and oil and mix on speed 7 for 5sec.

    Heat frypan on med heat with extra oil and add TBS of mixture at a time into the pan. Cook for 2 -3 min on each side or until golden. Serve warm with yoghurt berries and maple syryp.

    These are also fantastic with sliced banana. A savoury version - missing the coconut, I have used these spread with cream cheese, salmon and capers.

Tip

The Spelt can be replaced with millet or brown rice for a Gluten free option.

    Good recipe, thank you. I replaced the spelt with a blended gf sr flour and did half portion of coconut and then added coconut sugar for the rest of the portion. Used cow milk too. Will make it again!

    These were a hit with my kiddies, my mixture was a little thick so I think next time I will leave out the coconut. they had a great flavour.
