Ingredients
- 125 grams Butter
- 180 grams brown sugar
- 140 grams SR flour
- 1/2 teaspoon vanilla essence
- Pinch salt
- 1 egg
- 100 grams macadamia nuts
- 100 grams dried apricots, chopped, diced

Pre-heat oven to 160° (moderate). Line slice tray with baking paper.
Melt butter in TM bowl for 3 minutes 100° Speed 1
Add sugar, SR flour, essence, salt and egg and mix for 8 seconds Speed 3-4
Scrape sides of bowl and add macadamia nuts and dried apricots. Mix for 2 seconds REVERSE Speed 5.
Spread into slice tray and bake for 20-30 minutes. Dust with icing sugar.
Other Varieties:
Instead of apricots and macadamia nuts, use either:
Peanuts and sultanas
Chopped dates and walnuts
Apricots and almonds
White and dark chocolate bits (make sure mixture is cool before adding chocolate otherwise choc bits melt through the mixture)
