Ingredients

  • 5 carrots, about 400g, not peeled, tops removed and cut into quarters
  • 120 grams walnuts
  • 3 ripe bananas
  • 185 grams plain flour
  • 75 grams SR flour
  • 1 teaspoon bicarb soda
  • 1 teaspoon mixed spice
  • 1/2 teaspoon cinnamon
  • 120 grams Pure Maple Syrup
  • 200 grams vegetable oil
  • 120 Greek natural yoghurt

Recipe's preparation

  1. Pre-heat the oven to 150°C.

    Place the carrots in the TM bowl and chop for 5 seconds, speed 5. Scrape down the bowl.

    Add the walnuts and chop 2 seconds, speed 4.

    Add the bananas and mix Counter-clockwise operation"Counter-clockwise operation" speed 3 for 5 seconds.

    Add the remaining ingredients to the bowl and mix Counter-clockwise operation"Counter-clockwise operation" speed 5 for 20 seconds, MC on. You may need to scrape the bowl  during mixing.

    Spread in to a greased and lined cake tin and bake for 1 hour and 15 minutes.

    Alternatively spoon into cupcake cases and bake for 50 minutes.

    Ice with EDC cream cheese frosting.

    This recipe was delicious. I didn't have enough maple syrup so used honey.
    So yummy with cream cheese icing.
