Ingredients

Cake batter

  • 250 g Carrot's, Chopped into 3cm coins
  • 150 g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 150 g caster sugar
  • 100 g Shelled Walnuts
  • 150 g oil, (Any, but preferably Veg)
  • 2 eggs
  • 1 tsp vanilla essence

Frosting

  • 50 g Butter, Room Temp
  • 75 g cream cheese, Full Fat
  • 1/2 tsp vanilla essence
  • 100 g icing sugar
  • 1 tbsp walnuts, Chopped

Recipe's preparation

    Cake
  1. Preheat oven to 180 Degrees and line an 8" round cake tin.

     

    Place carrots in the bowl and chop Sp 5/ 5 Secs

    Place all the rest of the ingredients ontop of carrots and mix Sp 5/ 10-15 Secs or until thoroughly mixed.

    Pour batter into the cake tin and bake for around 45-50 mins. Check its cooked by poking a skewer into the middle, if it is cooked it will come out clean

     

    For the frosting

     

    Put all ingredients EXCEPT WALNUTS into bowl and mix on sp % for about 20-30 secs or until nice and creamy and so its not grainy.

    Spread onto completely cooled carrot cake and sprinkle chopped walnuts decoratively on the frosting

     

Tip

You can bake this cake in individual muffin cases. Pour batter into muffin cases and just bake for around 20-30 mins. It makes around 12 Muffins.

This cake can be frozen once cooked and cooled unfrosted. Just take out of the freezer when needed, let it defrost then make up the frostring from fresh and decorate.

    This was delicious! I made it for my mums birthday & added Nutmeg 2gms (1/4tsp), Cinnamon 3gms (1/2tsp) & Ginger Powder 2gms (1/4tsp) as well as 60gms White Chocolate in the icing. Loved by all & gobbled up.

    Has anyone made this without the icing? Just wondering if it's as nice without it? Maybe a dusting of icing sugar instead on top???

    This cooked up very nicely. I use GF Flour and the resul was very good. I doubled the icing, but it was too much by about a quarter.

    Definitely one of my top "go to" recipes. Very quick to prepare, & is always a no fail cake to bake. I bake mine in a spring lever tin for easy removal. Always a hit with family & friends. A++++++

    I made this for the first time as well and it was delicious. Could not fault it and so easy, I made it in a ring tin as my mum always said a ring tin does more even cooking, just my opinion. Would highly recommend and thank you so much for sharing this delicious cake.
