Ingredients

375g Flour

  • 250 grams sugar
  • 1 level teaspoon baking soda
  • 1 level teaspoon salt
  • 125 grams cocoa powder
  • 250 grams water
  • 125 grams oil, i only had olive oil. you can use vegetable oil
  • 1 level teaspoon white vinegar
  • 1 egg
  • 1 --- small beetroot, i used fresh
  • 1/2 --- zuchinni

Recipe's preparation

    Method
  1. Preheat oven to 180

    Place all dry ingredients in TM bowl and combine on speed 4 for 20 seconds.

    Set aside dry ingredients into separate dish.

    Place Beetroot & Zuchinni into TM bowl and blitz on speed 8 until really fine. Once blitz really fine looking scrap down side of bowl and add dry ingredients back in and combine on speed 4 for 10 seconds.

    Add all wet ingredients and combine on speed 5 for 10 seconds then scrap down sides of bowl and turn on speed 5 for a further 10 seconds.  Make sure mix is free from lumps and transfer to patty pans and bake in preheated oven for 10-15 minutes.

    I feel like this still needed SR flour. I'd make it again but I'd tweak the recipe

    My daughter is impossible when it comes to vegetables so the fact that these have both beetroot AND zucchini in it is a big win in my eyes!
