Ingredients
Dairy & Egg free Chocolate Chip Cookies
- 150 grams Nuttelex Buttery, or another dairy free butter sub
- 100 grams brown sugar
- 50 grams caster sugar
- 250 grams plain flour
- 1/2 tsp bicarbonate of soda
- 1 tsp Vanilla Bean Paste
- 70 g dairy free chocolate chips

- Preheat oven to 180c, line two trays with your reusable baking mats.
- Add nuttelex buttery and sugar to a bowl then blend 1minute/sp4. Scrape the sides down and blend again (40sec/sp4). The mixture should go pale.
- Add 250g flour, 1/2tsp bicarb and 1 tsp vanilla bean paste then blend again 30sec/sp4. Mixture should be combined and soft.
- Add chocolate chips and stir through 5sec/reverse/sp3 - you may need to fold through with your spatula.
- Place mixture into medium sized bowl and place in fridge for 30 minutes to chill.
- Using a 1 tablespoon measure, scoop cookie dough mixture and roll into a ball. Place onto lined tray 5cm apart.
- Bake for 20 minutes, allow to cool for 10 minutes then move to wire rack.
Tip
White chocolate and macadamia - omit dark chocolate chips and replace with white chocolate and 1/2 cup chopped macadamias.
Jam drops - omit dark chocolate. Roll cookie into ball and press a small indent with your thumb and drop in 1 tsp jam.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
