Ingredients
ZUCCHINI AND CARROT FRITTERS – EGG FREE
- 300 grams zucchini, chopped 3cm rounds
- 170 grams carrots, chopped 3cm rounds
- 200 grams cheese, grated
- 130 grams plain flour
- 2 tsp Avo Smash Mix, From Spice Tub (sub for salt and pepper)
- 1/2 tsp baking powder
- 1 tbsp olive oil
- 120 grams Milk, I use soy

- 1. Place zucchini into TM bowl and chop 5sec/sp4. Place chopped zucchini into a medium bowl.
2. Add carrots to the TM bowl and chop 6sec/sp5. Place carrots into a bowl with zucchini.
3. Place the zucchini bowl on top of the TM lid and weigh in grated cheese. If not pre-grated, place chopped cheese into TM bowl and grate 5-7sec/sp7. Set the bowl aside.
4. Without washing TM bowl, add the flour, avo smash seasoning, baking powder, olive oil and milk then blend 5sec/sp3 or until well combined.
5. Add back the zucchini mixture to the bowl and blend the batter and vegetables together 10sec/reverse/sp3.
6. You may need to give the mixture a little help with the spatula to ensure its all well coated and combined.
7. Take your frying pan and heat to a medium-low heat, add a little oil and add a large spoonful of mixture to the pan. Cook until well browned on the bottom (1-2mins) then flip carefully and continue to cook on the otherwise until browned and cooked through.
8. Repeat the above process until all batter has been used.
9. Serve with a side salad and enjoy.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
