Ingredients

Chocolate Zucchini Banana Muffins

  • 2 Bananas Mashed
  • 65 g oil
  • 1 egg
  • 200 g raw sugar
  • 1 1/2 Cups Grated Zucchini (drained well)
  • 250 g plain flour
  • 25 g cocoa
  • 1 teaspoons baking soda
  • 1/4 teaspoons baking powder
  • 160 g chocolate chips

Recipe's preparation

  1. Oil Muffin trays and pre-heat oven to 180C.

    Add banana, oil, egg, sugar & zucchini to TM bowl

    Mix speed 5, 5 seconds

    Add flour, cocoa, baking soda & baking powder

    Mix speed 4, 10 seconds

    Scrape down sides

    Mix speed 4, 10 seconds

    Add Chocolate chips

    Mix speed 3, 15 seconds, reverse.

    Bake for 20 minutes or until skewer comes out clean.

    I roughly chopped 2 zucchinis, then grated for 3 seconds speed 6 (I did them
    one at a time though, as I wasn't sure how much it would make) drained off water with nut bag, then mashed the 2 bananas 3 seconds at speed 4 before proceeding with recipe. I also halved the sugar and choc bits and they were sweet enough.

    mbadham13: well, they're not exactly healthy, with 200g sugar and 160g choc chips, plus all the fruit sugar from the banana. But the hidden zucchini is a bonus.

    These are devine, healthy, tasty and a huge hit in our family. I didnt change a thing except used organic ingedients, personal preference.

    This has become a regular in our home, my daughter (4) loves them and im stoked she gets her dose of veg/fruit all in one sweet treat. I enjoy the taste too tmrc_emoticons.) I always use wholemeal flour, raw sugar and coconut oil but last time i forgot the oil and they still turned out fine! I freeze them and add one into her lunch box and they seem to thaw pretty quickly.

    Success at our place.
    7year old grand daughter won’t eat fruit or veg but she loved these, I’ll tell her later about the zucchini and banana. Everyone else in the family enjoyed them too. Will be great to freeze and put in lunch boxes.
