- 3 egg whites
- 1 pinches salt
- 225 g icing sugar
- 200 g hazelnuts, ground
- 1 tsp cinnamon

- 1.
* Mill the sugar 30 sec on sp 10. Remove from bowl and set aside. No need to clean the bowl. - 2.
* Insert butterfly. Whip eggwhite and salt until stiff (speed 3.5 for about 3-4 minutes, or until stiff).
* With the speed on 3.5, add icing sugar spoon by spoon through the hole.
* Beat for another 2 min, sp 3.5 until the eggwhites are soft and creamy. - 3.
* Remove 100g of the egg white and set aside.
* Gently fold the hazelnut meal and cinnamon under the remaining egg white (speed 2). If it doesn't work, remove butterfly and use the spatula instead. - 4.
* Transfer the nut mixture onto a baking tray, layed out with a sheet of baking paper.
* With wet hands, shape the mixture into a 1cm tall rectangle.
* Spread the remaining eggwhite on top.
* Bake at 130°C (preheated) for 30 min on the lowest rack.
* Cover loosely with a piece of alfoil and bake for another 15 min. - 5.
* Cut into rectangles or diamonds while still warm. Once cool, the eggwhite topping tends to crack pretty badly (as can be seen in the picture).

Cinnamon Stars are a traditional German Christmas cookie. Using a cookie cutter to create stars ends up with a lot of "unshapely leftovers", because the dough can't be re-rolled. Cutting the cookies after baking might not produce the traditional star shape, but avoids the inter-stellar leftovers.
