Ingredients

  • 2 Large Ripe Bananas
  • 25 gram Fresh Dates
  • 100 g almond meal - or blitz your own almonds in the tmx, blanch almonds first if grinding own
  • 40 g Coconut Flour, (not desiccated ground up - too oily)
  • 1 eggs
  • 1 1/2 teaspoons baking soda
  • 150 g coconut milk
  • 2 level tablespoons chia seeds
  • 6 level tablespoons water

Recipe's preparation

  1. Preheat oven to 170 degrees.

     Mix chia seeds and water, let soak for 10 minutes

  2. Add bananas, dates and honey to TM and chop on speed 7 for 15-20 seconds.

  3. Add the remaining ingredients and mix on speed 4 for 20 seconds until combined. Do not over mix. The mixture will be very runny but it needs to be because of the coconut flour.

  4. Divide mixture into a greased muffin/cupcake tray, avoid filling too much otherwise it will overflow as they cook. Bake in (fan forced) oven for 20 minutes, then reduce temperature to 160 for a further 10 minutes or until the muffins are set when pressed lightly in the centre.

    Allow them to cool in the tray for 5 minutes before turning out. For best eating, allow the muffins to cool slightly and the centres to set a bit before serving.

    How much honey is required please? It's stated in the method but not on the ingredient list.

    Upgrading to 5 stars as I have made these many times now and even my older non Gluten free kids love them... And they are so healthy ... tmrc_emoticons.)

    I also made some changes to this clone as it was nearly 60% Vegan I just had to adjust the Honey and added Maple Syrup instead I used egg replacement and also changed the Coconut Milk for a lighter choice of Soy Milk and the are very moreish will be making these again  tmrc_emoticons.;)

    I made these today and  was happy with the taste but added 20g of honey like the original recipe states... you did not have honey listed in the ingredients and not sure if this is a mistake...I hope this is correct.. I like this recipe as it has no flour only almond meal ..my mixture was not runny as my coconut milk was very thick... It gets 4 stars
