Ingredients

Jam Drops

  • 110 g sugar, (milled to caster sugar)
  • 100 g Butter, (cubed)
  • 20 g coconut oil
  • 40 g honey
  • 1 --- egg
  • 160 g SR flour
  • 75 g plain flour
  • 50 g Quinoa flakes
  • 1 tsp baking powder
  • 2 tbsp strawberry or raspberry jam

Recipe's preparation

    JAM DROPS
  1. Preheat over to 180C.

    Mill sugar to caster sugar if using raw sugar.

    Cream butter and sugar for 5-10s on speed 5.

    Add egg and honey and mix for 5-10s on speed 5.

    Add flours, baking powder & quinoa flakes and mix for 10s on speed 4.

    Roll tablespoon sized balls and place on baking tray. Poke a hole in the the middle of each biscuit using the end of a wooden spoon. fill the holes with jam.

    Bake at 180C for 10-15 minutes until just golden.

Tip

Great for lunchboxes.

    I didn't have coconut oil, was planning to use veggie oil, but, despite being on ingredients list, was not included in the steps, so I omitted it altogether, which, was a good thing, as they turned out very moist anyway.

    Also sub'd rolled oats for quinoa flakes.

    I made the jam well bigger, as first batch seemed a bit bland.  

    Next time I will reduce honey to try and get them dryer again.
