Ingredients

  • 280 g Oat Bran Cereal
  • 70 g Cranberries
  • 70 g Dried Dates, pits removed
  • 70 g walnuts
  • 70 g raw sugar
  • 10-15 g Rice Bran Oil, Safflower, Grapeseed or Olive Oil
  • 2 eggs, or just egg whites
  • 110 g Milk, or skim milk
  • 1 tbsp baking powder

Recipe's preparation

  1. Preheat over to 170C (fan forced). Line muffin tray with muffin papercups.

  2. Mill Oat Bran Cereal for 30 seconds on Speed 10.  

  3. Add Baking Powder, mix for 3 seconds Speet 5. Remove from bowl and set aside.

  4. Add Dates & Walnuts into bowl. Chop for 3-5 seconds, Speed 3. If you want a chunky texture, 3 seconds. Do not over chop.

  5. Add all the ingredients back into bowl. Mix 10 seconds, Speed 5 on Reverse. Mixture will be slightly more liquid than normal cupcake/muffin mix.

  6. Divide muffin mix into lined muffin tray.

  7. Bake for 15 minutes, check by inserting a skewer. If it comes out clean - your muffins are done.

  8. Remove immediately from tray and onto rack to cool. This prevents over cooking of the muffins.

  9. Alternative/Variation:

    Step 2 - Add 1 Tbspn of Cocoa Powder

    Step 4 - Add 70 g Dark Chocolate with the Dates & Walnuts to chop to have a chocolatey treat. You will have melty chocolate bits when muffins are served warm.

Tip

This recipe is one I've played with and converted from a Robert E Kowalski recipe in The 8-Week Cholesterol Cure Cookbook.

Dried fruits/nuts can be substituted interchangeably - i.e. you can use pecans or apricots. I used Cranberries for the seasonal effect.

Substitutions using Ogran No Egg, Soy Milk to create an Egg-free & Lactose-free Vegan Friendly version. Remember you will need to add a little extra sugar to make it tastier.

Original recipe calls for using only egg white, but using egg substitute also reduces the cholesterol in this recipe.
