Ingredients
Cheesecake
- 500 grams cream cheese
- 1 can condensed milk
- 3 Limes
- 125 grams caster sugar
- 2 tablespoon Gelatine powder
- 1 teaspoon Vanilla Ess/Extract
- Cointreau (optional)
Lime Curd
- 100 grams Butter
- 1 Zest of a lime
- 100 grams lime juice
- 180 grams raw sugar
- 3 eggs
Crumb
- 1 --- Packet of Vanilla Wafer Biscuits
- 1 tablespoon sugar
- 1 1/2 tablespoon Vanilla Exract
- 20 grams Butter
- 1 egg white, (optional)
Garnish
- 1 zest of lemon
- 1 Zest of Lime
- 6 strawberries

Cheesecake
Disolve Gelatine Powder in 100g of Hot Water, set aside
To the Thermomix Bowl add Cream Cheese, Condensed Milk, Juice of 3 Limes, Caster Sugar and Vanilla Essence. Once Gelatine has disolved add to mixture.
Blend for 20 seconds on speed 7 until smooth
Tip mixture into Silicone Baking Cups or Similar
Optional - Coat the top of each mixture with Cointreau
Allow to set in the refrigerator for 4 hours.
Lime Curd
To the Thermomix Bowl add zest and sugar and mill for 15 seconds on speed 10
Add remainder of ingrediants and cook for 12 minutes, 60 degrees, speed 3.
Crumb
To the Thermomix Bowl add wafer bisuits and chop for 15 seconds on speed 7
Add sugar, vanilla and butter and blend for 8 seconds on speed 7
Spread mixture onto Baking Tray with Baking Paper ensuring there is an even layer.
Optional - Use a pastry brush to gently brush the beaten agg white of the surface of the crumbs.
Bake in oven on 180 degress for 15-20 minutes
Allow to cool before serving
