Ingredients
Cake
- 250 grams Butter, softened
- 335 grams caster sugar, (1 1/2 cups)
- 3 Eggs.
- 250 grams flour, (2 cups)
- 2 teaspoons baking powder
- 2 tablespoons coffee&chicory essence
- 185 grams Milk, (3/4 cup)
Coffee Icing
- 300 grams icing sugar, (2 cups)
- 1/4 teaspoon Butter, softened
- 2 tablespoons water, approximately
- 1/4 teaspoon vanilla essence
- 2 teaspoons Instant coffee powder
- 1 tablespoon hot water

- Pre Heat oven to 180 degrees and grease deep 22cm round cake tin that has had base lined with baking paper.
- Place butter and caster sugar in bowl. Cream together 1 min Speed 4
- Scrape down bowl .Add eggs 1 at a time and beat 30 seconds Speed 3. add each egg then repeat, scrape down when finished
Sift flour and baking powder into mixing bowl. Add essence and milk down side of bowl. 20 seconds speed 4, scrape down bowl, 20seconds"Counter-clockwise operation" speed 3.
Spoon into cake tin and bake 50-55 minutes or until a skewer comes out clean. Leave cake in tin for 10 minutes before turning onto a wire rack.
When cold spread with Coffee Icing - Sift Icing sugar into an ordinary bowl , add butter and vanilla essence. Add coffee dissolved in hot water. Mix well and add further water if needed.
- If desired slice cake in half once cooled and fill with mock cream ( see recipecommunity.com.au) before icing
