Ingredients

Cupcake

  • 200 grams nutlex
  • 200 grams caster sugar
  • 1 pinch salt
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 200 grams GF Self Raising Flour

Strawberry Cream Cheese Frosting

  • 5 strawberries, halved and stalks removed
  • 1 teaspoon vanilla extract
  • 125 grams nutlex
  • 250g grams LF cream cheese
  • 640 grams icing sugar

Recipe's preparation

    Cupakes
  1. 1. Preheat oven to 175 fan forced.

    2. Place sugar and nutlex into the TM bowl and and mix for 15 seconds/Speed 5.

    3. Add the eggs, salt, vanilla extract and flour and mix for 15 seconds/Speed 5.

    4. Scrape down sides of mixing bowl with spatula, then mix for a further 10 seconds/Speed

    5.Place the cupcake mixture into the cupcake cases - filling them to half full.

    6. Bake in the oven for 12-15 minutes or until golden and when they spring back when touched in the centre.

    7. Leave cupcakes in baking tray for 5 minutes before moving to wirerack to cool completely

  2. Strawberry Cream Cheese Frosting
  3. 1. Add strawberries and vanilla to TM bolw. Blend 30 seconds/Speed 8. Strawberries should be more like a jam now. Blend further if not.

    2. Add cream cheese, butter and icing cugar. Mix 1 minute/Speed 4. Push down sides with spatula and mix again if needed.

    3. When cupcakes are cold spread frosting over them with piping bag or spoon.

Tip

If using vanilla essence add 2 teaspoons.

Cream cheese frosting will need to be kept in the fridge if it is not being used straight away.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     The frosting tastes amazing and was so easy to make! But it wouldn’t set even though I tried freezing it, ended up with a very goopy sloppy cake
