Ingredients
Dough
- 300 g Milk
- 2 tablespoons sugar
- 4 teaspoons dried yeast
- 60 g Butter
- 460 g plain flour
- 2 teaspoons salt
Filling
- zest of one orange
- 240 g caster sugar
- 120 g Butter
Icing
- 480 g icing sugar
- 2 tablespoons orange juice

Mix sugar, milk and yeast for 1 min / 37 degrees / speed 1.
Add all remaining Dough ingredients and mix for 10 seconds on speed 7.
Kneed the dough for 3 mins / "Closed lid" / "Dough mode"
Transfer dough to a floured ThermoMat (or floured benchtop) and work in to a ball.
Wrap dough in the ThermoMat or place in a bowl and cover with a tea towel and allow to rise for 30 minutes or until doubled in size.
While the dough is rising, mill the orange zest and sugar for ten seconds / speed 9.
Add butter and melt for 1 or 2 minutes at 50 degrees / speed 2
Once the dough has risen, pre-heat the oven to 220 degrees, then cut the dough in half and roll one half out into a rectangle 25cm x 30cm
Spread half the filling evenly on the rectangle of dough
Roll the dough up in to a log shape, starting on the long side, and cut in to 12 even slices
Repeat with the other half of the dough and the other half of the filling.
Place the slices on oven trays and allow to rise again for 15 - 30 minutes
Bake for 10 to 15 minutes, until golden brown.
Allow to cool slightly before icing.
Mix both ingredients in a bowl
Drizzle the icing over the scrolls
