Banana Bread
- 3 ripe bananas
- 2 eggs
- 1 tbsp Vanilla Exract
- 1/4 cup of olive oil
- 1/4 Cup of RMS
- 1 Cup of buckwheat flour
- 1/4 Cup of Rice flour
- 1/2 tsp bicarb soda
- 1/2 tsp baking powder GF
- 1 pinch salt

• Preheat oven to 170deg fan forced.
• Place all wet ingredients into the thermomix bowl and mix 5 seconds, speed 5.
• Scrape down sides, add dry ingredients, 10 seconds, speed 5.
• Pour batter into cake tin and bake for 45 min or until skewer comes out clean.
Soft and moist, this Banana Bread is not only Gluten free but also free from dairy, refined sugar and nuts.
Tip
If cake is not yet cooked after 45 min, continue baking and checking after 5 minute increments.
This recipe is also great to use for cupcakes, just shorten the bake time to 20 minutes, or until skewer comes out clean.
