Ingredients
- 180 g sugar
- 125 g Butter
- 1 teaspoon vanilla extract
- 1 egg
- 230 g plain flour
- 30 g dessicated coconut
- 0.5 teaspoon baking powder
- 1 tablespoon Milk

Place sugar in bowl and mill for 5 seconds speed 7.
Add butter and vanilla and cream for 30 seconds speed 6.
Scrape down sides of bowl.
Add egg and stir in for 15 seconds "Counter-clockwise operation" speed 4.
Add flour, coconut, baking powder and half the milk and process for about 30 seconds speed 3 until a soft dough forms. (Add more milk here if needed).
Roll teaspoons of the dough into balls and place on tray. Flatten slightly and then push your finger into the middle of each one to make a hollow.
Fill this hollow with a little jam - not too much or it gets messy.
Bake for about 10 - 12 mins.
Preheat oven to 175 degrees and line baking tray with paper.
Tip
Both the dough and the bisuits freeze well.

These are delicous if not a tad sweet. Kids loved them. Second time around reduced the sugar by 30g and I loved them even more

Oh my god!! These are so Yummy! Made more than the said 24 but I placed them too close together and they grew so much they kind of combined. So heads up, leave room on the tray for growth! And I would even make them smaller! You can always eat a few! Thanks for the fabo recipe
