Cake
- 125 g Butter, at room temp, and chopped
- 150 g caster sugar
- 2 eggs
- dash vanilla extract
- dash coconut extract
- 60 g yoghurt
- 300 g SR flour
- 1 x 432g can pineapple pieces, drained, juice reserved for the glaze
- 40 g Shredded coconut, + extra for sprinkling
Pineapple glaze (optional)
- 120 g icing sugar
- 40 g Reserved pineapple juice, app. 1/2 cup

- Preheat the oven to 180C.
Grease and line a good size loaf tin.
1. Blend the butter, sugar, eggs and essences sp4/20 secs. Don't worry if the mixture splits. It will come together in the following stages
2. Add the flour and yoghurt and blend again sp 4/"Counter-clockwise operation" /20 secs
3. Add the drained pineapple pieces and blend sp4/15 seconds or until chopped enough for your liking.
4. Add the coconut and blend sp4/"Counter-clockwise operation" / 10-15 secs or until combined.
5. Spread into the prepared loaf pan and sprinkle with the extra shredded coconut (optional). As much or as little as you like.
6. Bake for app. 50 mins, or until cooked when tested.
7. Leave in pan for 5 mins, before cooling on a wire rack.
8. Drizzle with the glaze. - 1. Combine in the "Closed lid" , sp 4/ 15 secs.
2. Drizzle over the cooled cake.

So delicious.
Keeps well...and even better the following day..
Yummy served warmed up with a scoop of vanilla icecream ;p
