- 200 g dried coconut, desiccated or flaked
- 90 g sunflower seeds, soaked overnight in water
- 100 g dates, Medjool best
- 15 g Cacao
- 1 teaspoon cinnamon
- Extra cacao, goji berries, buckwheat groats etc for rolling balls in

1. Placed dried coconut in mixing bowl and mix 1min/37C/Speed 8. Scrape the sides of the bowl.
2. Repeat step one a further two times, or until the coconut is runny.
1. Drain the sunflower seeds well and add to the mixing bowl containing the coconut butter.
2. Mix 10 sec/Speed 8, then scrape.
3. Repeat step 4 a further two times or until the sunflower seeds and coconut are well blended and the mixture is fairly smooth.
4. Add dates and mix 20 sec/Speed 10.
5. Add the cacao and cinnamon and mix for 15 sec/Speed 6.
6. Roll into small balls (approximately 1 tablespoon each).
7. Roll in your choice: desiccated coconut, buckwheat groats that have been milled for a few seconds on speed 10, dried goji berries that have been chopped on speed 10 for a few seconds, cacao etc etc.
These truffle balls are very versatile. At step 5, add in peppermint essence, orange zest, pepitas, chia seeds, anything you like. Cinnamon has great health benefits, so try and keep it in.
The dough isn't very sticky, so it's a great recipe for the kids to make themselves.
We don't like things sweet; if it's not to your taste, add a few more dates.

Wow these are delicious!
i couldn’t get my coconut into an butter either, but just added a touch of coconut oil at the end to modify.
i added one drop of peppermint oil, and left them as is! Yum!
Great final product! Just a bit of editing needed in the recipe.
* temperature doesn't work over speed 6
* never got the coconut runny but to a paste when I increase the temp to 55.
* 3. Repeat step 4 should read repeat step 2.
Rolled mine in cacao, crushed raw peanuts and sweet dukkah.
