Ingredients

  • 500 g white spelt flour
  • 10 g Yeast
  • 20 g olive oil
  • 1 teaspoon salt
  • 40 g Rapadura Sugar
  • 1 teaspoon mixed spice
  • 2 teaspoons cinnamon
  • 100 g currants

Recipe's preparation

    How to make:
  1. Heat the buttermilk in TM bowl for 4 minutes at 50deg, speed 1. 

  2. Add all other ingredients except currants. Bring together on speed 5-6 for 6 seconds. 

  3. Knead dough for 1min 30 seconds. Weigh in currants and knead for 30 seconds more. Wrap dough in breadmat and allow to rise until doubled in size (at least 30 minutes).

  4. Divide dough evenly into 16 portions. Roll each portion into a ball and place close together in a lined square cake tin.

  5. Bake in a cold oven, at 220deg for 25-30 minutes until browned and the buns spring back when lightly pressed.

Tip

Buttermilk can be bought, or use the leftovers from making your own butter. it is cheap to use this way, and is great for your digestion!

 

Brush the buns with honey once they are cooked and hot out of the oven for an extra touch of sweetness.
