Ingredients
Dough
- 45 grams Butter
- 300` grams sultanas or currants, soaked in water
- 225 grams Milk, luke warm
- 1 egg
- 10 grams all spice, ground
- 20 grams yeast, dried
- 5 grams salt
- 450 grams High Grade Flour
- 45 grams brown sugar
Crosses
- 100 grams flour
- 100 grams water
- 10 grams oil

Mix flour, sugar, yeast, all spice, egg and warm milk on speed 3 for 2 minutes.
Knead for 1 minute and add softened butter.
Add the fruit to the dough
Keep kneading for 3 minutes.
When the dough is well kneaded, place in a large bowl and leave to rise.
Leave to prove until the dough has doubled.
Divide the dough into 9 pieces of 100 grams each and form a bun.
Place the buns on the greased baking tray. Leave tp prove until double in size.
Mix ingredients for the cross. Put the cross mixture into a plastic bag. Cut the bottom corner off.
Pipe the crosses on the buns and bake for 10 to 12 minutes in a preheated 190 degrees fan bake.
