I'm cooking this todayRecipe's preparation
- 1. Preheat oven to 170*C
2. Place dates in TM bowl, chop 10sec/Sp7. Add cranberries, chop 5sec/sp7. Set aside.
3. Place butter, sugar, honey and vanilla into TM bowl, cook 3.5min/100*/Sp2. Ensure it is all melted.
4. Place remaining ingredients in TM bowl, including the dates and cranberries. Mix 1min/Sp 2 or until all combined well.
5. Press a good spoonful of mixture into 24 silicone cupcake moulds. This should divide nicely into 24, compact it into the mould, should be about a third to half full. (I usually use a soup spoon, just the right shape too). This can also be done in a nonstick muffin tin, spray as well so they don't stick. It is a lot easier in the silicone cupcake moulds
6. Bake for 15-20 min or until golden brown. Keep an eye on them near the end as the bottom will be a bit darker than the top.
7. Allow to cool in the moulds or tray, then remove.
8. Store in an airtight container.

Tip
Cranberries can be substituted with apricots.
You can make them thicker, makes about 18 then.
