Ingredients

dough

  • 1/2 peel of one lemon, (no pith)
  • 75 grams raw sugar
  • 75 grams olive oil
  • 400 grams Self Raising Flour
  • 3 small eggs
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract

Lemon icing

  • 200 grams icing sugar
  • 20-30 grams lemon juice

Recipe's preparation

    Dough
  1. Preheat oven 180 degrees fan forced.

    Mill lemon peel and sugar 10 secs speed 9

    Add oil, eggs, vanilla mix 20 secs speed 5

    add flour and baking powder. Mix 6 secs speed 6 then kneadDough mode"Dough mode" (interval speed) or dough mode for 1 minute

    Tip onto lightly floured surface or Thermomat and roll into a sausage shape. Mixture will be sticky but workable From little "snails" or alternatvely roll out and use cookie cutters to form your desired shapes.

    Cook 12 mins 180 degrees till golden
  2. Icing
  3. Mill icing sugar 10 secs speed ten.

    Scrape down.

    Add lemon juice and mix 15 secs speed 4. Mixture should be thick and spreadable.

    Ice the biscuits and leave to dry.

    enjoy!

Tip

Recipe can be easily doubled - just will need to tip out and knead little by hand.

    We dont often eat biscuits (prefer muffins and cakes!) but we love the tang of the lemon icing. Hmmmm delicious

    My family quite often ask me for these biscuits as they taste so good and remind us of our Nonna.

    These are so nice, I didnt leave in them in the oven for the full 12mins as I could see them browing and they smelt cooked. I rolled half a batch quite small and the other a little bigger as the mixture was drying out, but that could just be the enviorment as its very hot here.
    I have taste tested and they are devine. My 6 year old loves lemons and this has curbed her craving after eating quite a few.
    I will be making these again.
