Tea Cake
- 250 --- ml strong black Tea
- 160 g sultanas
- 160 g raisins
- 1 egg
- 320 g SR flour
- 100 g raw sugar

Place Sultanas, Raisins & sugar in a bowl & pour over hot black teas & stir through - leave to one side (nice if left overnight)
Place Flour, egg & fruit tea mix together and combine "Counter-clockwise operation" 60 seconds / sp 1
Pour mixture into greased loaf tin & bake for 50 until golden in colour.
Tip
Can use dried dates or mixed fruit.
Freezes well.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

I have made it as above, and also with raisins & fruit medley using a fruit tea ... also very scrumptious.
Made this today as I wanted to use up some mixed fruit. Very easy recipe. It looks and smells delicious. One small problem, I couldn't see an oven temperature so I set it first at 180 degrees then turned it down to 160 degrees as it was browning too quickly. I'm sure my Irish husband will love this. Thank you

Can the tea and sultana mix be cooked in the Thermomix instead of sitting overnight to cook?
