Ingredients

Biscuit

  • zest and juice of 2 limes
  • 185 g butter, cold
  • 220 g raw sugar
  • 250 g plain flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp nutmeg ground
  • 1/4 tsp cinnamon ground

Spice Mix

  • 75 g raw sugar
  • 1/4 tsp cinnamon ground
  • 1/4 tsp nutmeg ground
  • zest on lime

Recipe's preparation

  1. Preheat oven to 180 degrees celsius.

    Make spice mix by placing zest, sugar, cinnamon and nutmeg in TM bowl and mill for 15 seconds on speed 8. Set aside.

     

  2. Make biscuit dough:

    Place zest and sugar into TM bowl and mill for 15 seconds on speed 8. Scrape down sides of the bowl. 

  3. Add butter and blend for 10 seconds on speed 5.

  4. Add the rest of the ingredients and mix for 3 seconds at speed 5.

  5. Knead Dough mode"Dough mode" until it has come together to form a pliable dough. (30 secs to 1 min)

     

  6. Remove form TM bowl. 

  7. Form walnut sized balls of dough and roll in Spice Mix. Arrange 3cm apart on prepared trays. Flatten lightly using the base of a glass.

  8. Bake for 15 -20 minutes, until bases are golden and edges colour. Transfer to a wire rack to cool.
