Ingredients
Crust
- 150 grams unsalted buter
- 1 teaspoon Vanilla ess
- 100 grams caster sugar
- 20 grams cornflour
- 250 grams plain flour
Topping
- 4 eggs
- 10 grams Finely grated lemon rind
- 90 grams flour
- 180 grams caster sugar
- 160 grams lemon juice

Preheat oven to 180 (fan-forced)
Crust:
Grease a 3 cm-deep, 16cm x 26 cm slice pan
Line with baking paper, allowing a 2cm overhang on all sides
Place butter in bowl mix 8 sec on speed 6 (depends on how hard your butter is)
Melt butter at 50 degrees on speed 2 for 2 minutes (or until melted)
Mix in vanilla and sugar – 5 seconds on speed 2
Add flours over butter mixture and mix for 10 seconds on speed 3.5 or until a soft dough is formed.
Transfer to prepared pan. Press into pan. Bake for 15 – 20 minutes or until golden brown. (see second photo attached)
Set aside to cool
Topping:
Add eggs, lemon rind, flour and sugar together in the bowl and mix until smooth.
Add lemon juice and mix for a further 10 seconds – speed 2.5
Pour over base
Bake for 15 – 20 minutes or until just set.
Cool completely in pan
Dust with icing sugar and cut into squares

I made this to take to an afternoon tea, everyone loved it. It was very easy and quick to make.
My husband has been nagging me to make a lemon slice so I tried this one. Only problem is that I'll now have to keep making it regularly because it was such a hit it didn't last very long!

The texture is very different than your usual lemon slice - but very yummy. my boys couldn't stop eating it last night. I followed the receipe as it was, no changes made. this one is in my favourite folder.

Some of the base separated from the topping as it was a bit crumbly and the topping was a bit rubbery.
Made this last night and its turned out so yummy. I'm not a fan of lemon sweets so I made it for hubby but I really enjoyed it too
