Ingredients
Cake
- 125 g unsalted butter
- 120 g full cream milk
- 2 eggs
- 1 vanilla extract
- 100 g caster sugar
- 125 g plain flour
- 2 level teaspoon baking powder
- 70 g dessicated coconut
Icing
- 125 g icing sugar
- 22 g Butter
- 1.5 tbsp Boiling water
- 2 tbsp Dutch cocoa powder, (Adjust based on your tastes)
- 1 --- Cup desiccated coconut

- Add butter to "Closed lid" and melt SP1/45degrees/3mins.
- add sugar, milk, eggs and vanilla to "Closed lid" and mix SP4/20sec
- Add flour, baking powder and coconut to "Closed lid" and mix SP4/20sec. Scrape bowl and gentle fold anything that hasn't been incorporated into the batter.
- Pour mixture into a slice tin, making sure it's spread evenly and bake in a 140 degree oven for 35-40mins. Press the centre of the cake with your finger, if it bounces back it done!
- Add all ingredient to the bowl and mix 15sec/SP4, scrape bowl and mix again 15sec/SP4.
- pour icing over cake and top with coconut. Slice just before serving and store in an airtight container..

Baking at a low heat allows for an even, flat rise of your cake!

Nana_silverfox21: this is the size pan I use.. 27.5cm x 17.5cm x 3.5cm.. they are normally called a brownie or slice pan 😊
