Ingredients

Cake

  • 1 zest of 1 lemon
  • 150 grams caster sugar
  • 185 grams Butter
  • 3 eggs
  • 240 grams plain four
  • 3 teaspoons baking powder

Cheesecake frosting

  • zest of 1 lemon
  • 75 grams Philly cheese, full fat
  • 30 grams Butter
  • 100 grams icing sugar
  • 2 teaspoons lemon juice
  • 70 grams Lemon curd, optional

Lemon icing drizzle (Optional)

  • 1 cup icing sugar
  • 1 tablespoon lemon juice

Recipe's preparation

    To prepare the dough:
  1. 1. Preheat oven to 180c.

    2. Grease and line a 20cm cake tin. I used a springform.

    3. Put lemon rind and caster sugar into theClosed lid"Closed lid" .

    4. Blend 20 secs, speed 9. Scrape bowl.

    5. Add chopped butter. Blend 20 secs, sp 4. Scrape down Closed lid"Closed lid" .

    6. Add all the remaining dough ingredients.

    7. Blend 30 seconds, sp.5.

    8. Spoon mixture into prepared tIn. Smooth top.

    Bake for around 25-30 minutes, or until golden and cooked when tested.

     

  2. Lemon cheesecake frosting
  3. 1. Place lemon rind and sugar into Closed lid"Closed lid" and blitz sp 9/15 seconds. Scrape.

    2. Ad remaining ingredients and blitz sp 4/1.5 minutes, scrape and repeat until smooth.

     

     

  4. Lemon drizzle (optional)
  5. 1. Place sifted icing sugar into a small bowl and add lemon juice, stirring until smooth.

  6. Asembly
  7. Split cake in half horizontally.'

    1. Spread frosting mixture over the top of one of the cakes.

    2. Place other cake on top.

    3. Spread with optional lemon drizzle, or dust with icing sugar.

Tip

This cake is a variation on my "Cruchy top lemon cake". It is a much fancier version, with a delicious cheesecake flavour frosting.

It's not as light as a sponge cake...but the frosting keeps it nice and moist.
