Lemon Custard Slice
- 170g butter,soft
- 120g sugar
- 60g cornflour
- 170g plain flour
- 395g condensed milk
- 60g lemon juice
- 2 eggs separated
- 40g desicated coconut
- 1/2 vanilla bean

Place sugar & vanilla bean into the TM bowl & mill for 20 secs on speed 10. Place half of the sugar to one side in a bowl. Add butter & mix for 10 secs on speed 6. Then add in the flour & cornflour & mix for 10 secs speed 5.
Press mixture into a 20 x 30cm tin lined with baking paper & bake in a 180 degree oven for 20 mins & set aside.
Place egg yolks, condensed milk & lemon juice in the TM bowl & mix for 10 secs speed 4. Spread this mixture over ther pastry when it has cooled slightly.
In a completely clean bowl whip egg whites with the butterfly on speed 4 till stiff peaks form & then gradually add in the reserved vanilla sugar over 3 mins 37 degrees speed 4, fold in the coconut on speed 2 for 10 secs. spread this mixture on top of the lemon custard mixture & bake in the oven for another 15 mins.

Tip
You can try making an orange or a lime version or use vanilla extract instead of the vanilla bean.

This is a delicious slice. I agree the base was a bit dry and crumbly, maybe add a little bit more butter / cook a little bit less? Would go perfectly with a dollop of cream too !
This is delish! I found my base was a bit dry so might cook for less next time.
