Ingredients
Cake
- 250g butter softened, cubed if from fridge
- 3 tsp lemon rind
- 3/4 cup caster sugar
- 3 eggs
- 1 1/4 Cup Greek-Style Yoghurt
- 1/4 cup lemon juice
- 1 1/2 Cup Self Raising Flour
- 1/2 Cup Plain Flour (Or Gluten Free Plain Flour)
Lemon Syrup
- 1/4 cup lemon juice
- 2/3 cup caster sugar

Preheat oven to 150 Degrees C fan forced and prepare a 24cm fluted ring pan.
Place lemon rind into mixing bowl and chop 1 min/speed 9.
Add butter and sugar and combine 1 min/speed 3.
Add eggs one at a time over 1 minute on speed 3
Add half of the yoghurt and half of the lemon juice and combine 30 sec/speed 3.
Add half the flours and combine 30 sec/speed 4.
Add remaining lemon juice and yoghurt and combine 30 sec/speed 4.
Add remaining flours and combine for 30 sec/speed 4.
Pour mixture into prepared fluted ring pan and bake for 50 minutes (check as may need longer-skewer to come out clean)
Cool in pan for 10 minutes and then turn onto a cake stand
Place lemon juice, sugar and 1/4 cup of water into mixing Bowl and heat 4 min/90C/speed 4.
Pour syrup over hot cak and top with lemon zest (Optional) and serve with yoghurt (Optional)
Can reserve half the syrup to pour over each slice (if have left overs heat before serving and then top with any syrup left)

I thought the mixing times in the thermi was too long. I was right. This cake sunk and is like rubber. Flavour is good, but inedible as cake. I would try this recipe again, but definitely reduce the mixing times once the flour is in and wouldn't bother with the lemon syrup.
I have no idea what went wrong but my mixture seemed really lumpy but it wasnt on touch/taste. I also would have preferred everything in grams as mentioned above by other people.Will have to see how these turn out. But i would be keen to try it again if these ones fail
thanks for the recipe. I love to use Thermie recipes as there's no separate weighing - disappointed to see that this recipe used cups and teaspoon measurements and not grams...... how do you measure lemon zest in teaspoons when it has to be grated in the TM bowl? Am going to make this now but will have to convert for grams for ease of use next time.
This is a great recipe! I used lime in place of lemon as that was all I had on hand. I didn't have enough lime juice to make the syrup so I served it warm with custard! Love that you could serve this as a coffee and cake dish or as a dessert with custard. YUM!!
Absolutely beautiful! I used oranges because I didn't have any lemons.
I'm just eating a slice now after dinner with a cup of herbal tea. Delicious cake!! Was a perfect way to use up excess lemons and yoghurt we had. Thank you!

Hubby wanted a cake, I wasn't excited about making this one, thought it was pretty plain and boring.. Boy was I wrong.. It is so DELICIOUS!!!!! Will be making again for sure!! Yum!!! About to go have a second piece now
This was fantastic it was great warm straight out of the oven.
This is a great cake to make if you have a heap of lemons to use up. Also I had some homemade yoghurt that I wanted to use up. Just delicious.
