Lime Cake with lime syrup icing
- 230 grams unsalted butter, room temperature
- 230 grams caster sugar
- 270 grams Self Raising Flour
- 3/4 teaspoon baking powder
- 2 Limes, juice and zest
- 4 eggs
- 50 grams plain Greek yoghourt
- 60 grams Milk
- 2 limes juice only, for syrup
- 130 grams caster sugar, for syrup

For the cake:- Put all ingredients, except the extra lime juice and caster sugar that is for the syrup, into the bowl, mix for 16 seconds at speed 6. Pour into a lined 20 x 20 x 5 cm square baking tin anad place in a preheated oven 175c or 165c (fan forced) for 225 to 45 minutes or until a skewer comes out clean. Your cake should be lightly golden. Remove form over and let rest for five minutes. Make the lime syrup icing by combining the juice of two limes and 130 gms of caster sugar together. When the cake has been resting for five minutes, pur the syrup over the cake ensuring you coat the whole cake. Leave the cake in the tin for about ten minutes more and then remove form the tin and allow to cool on a wire rack, DELICIOUS
