Ingredients

Vanilla Biscuits

  • 125 g Butter
  • 100 g caster sugar
  • 1 tsp vanilla extract
  • 65 g Milk
  • 220g g Self Raising Flour
  • 60 g custard powder

Buttercream Filling

  • 50 g Butter
  • 80 g cream cheese, Cold
  • 175 g icing sugar
  • 1/2 tsp vanilla extract

Jam (Any flavour, optional)

Recipe's preparation

    Vanilla Biscuits
  1. Preheat Oven to 180degrees (160 fan force)

    Add butter & sugar to jug, mix 20 seconds, speed 5

    Scrape down sides of bowl

    Add milk & vanilla, mix 20 seconds, speed 4

    Add flour & custard powder, mix 25 seconds speed 5

    Place dough on lightly floured bench or Thermomat & roll into log shape, cut equal size 'chunks', roll into a ball and place on baking tray, flatten the top of each ball with a fork

    Bake for 20 minutes, or until slightly golden.

  2. Buttercream Filling
  3. Place all ingredients into jug & mix 15 seconds, speed 5, or until combined

  4. Assembly
  5. Spread some jam on the underside of each biscuit

    Pipe or spoon a blob of buttercream filling onto one side & sandwich together.

Tip

These are best eaten on the day of making, otherwise they will keep in the fridge for a day.

 

The vanilla biscuits are delicios on their own, they can also be made with a couple of handfuls of choc chips mixed through

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
