Ingredients
Moist Vanilla Cake (extra large!)
- 180 grams Canola or grape seed oil
- 125 grams Plain Greek Yoghurt
- 3 eggs
- 380 grams Milk or Buttermilk
- 1 level tsp vanilla extract
- 400 grams sugar
- 550 grams plain flour
- 1 level tsp baking powder
- 1 level tsp baking soda
- 1 level tsp salt

I'm cooking this todayRecipe's preparation
- Preheat oven to 160 degrees.
1) add the following:
oil, yoghurt, eggs, milk, vanilla and sugar to mixing bowl.
Mix speed 4 for 10 seconds
2) Add flour, baking powder, baking soda and salt.
Mix speed 4 for 20 seconds
Scrape down sides of mixing bowl.
Mix speed 4 for 10 seconds.
Bake in a moderate oven (160 degrees) for between 1 hour to 1 hour 45 mins depending on the size of your cake pan. The taller the pan, the longer you need to bake. Check ever 10-15 mins after an hour with a skewer to test when cake is ready.
Decorate and enjoy!

This makes a large yet moist cake. Perfect for for that cake that needs to be that little but bigger than most standard recipes.
I have a caking business and this is the only vanilla vanilla recipe I have found that actually stays nice and moist.
Perfect split between 2+ cake pans for a layered cake. Or swirl through some colour for a lovely colour mix.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Did make a large, firm cake, great for shaping for a kid's cake. Mine was a little on the dry side but I may have left it a fraction too long. Feedback from everyone was positive, would definitely use the recipe again.
