Cake
- 200 g Self Raising Flour
- 200 g flour
- 230 unsalted butter
- 300 raw sugar
- 4 large eggs
- 220 full cream milk
- 2 tablespoons vanilla extract or paste
- 250 g white cooking chocolate (melted)
Cream cheese icing
- 500 g cream cheese
- 200 g icing sugar
- 20 g lemon juice

I'm cooking this todayRecipe's preparation
- 1) Add butter and sugar and mix 30 sec/ sp 5. Stop and scrape down the sides of the jug
2) With blades rotating on speed 4, add the 4 eggs one at a time until mixed slightly (roughly 10 seconds)
3) Melt the white cooking chocolate in the microwave (dont over do it)..then add to the thermomix bowl.
4) Add flours, milk and vanilla extract and mix 1 min / speed 6
5) Seperate mixture into two tins (lined with baking paper) I use 20-22cm tins.
6) Bake for 60 minutes at 180 degrees FF oven (sometimes if using 20cm tin I'll bake for a further 10 to 15 minutes on top of the 60 minutes). Sip A skewer into the cake and it should come out clean once it is ready.
THIS MAKE TWO CAKES THAT YOU CAN THEN CUT IN HALF + STACK ONTOP OF EACHOTHER TO MAKE A 4 LAYER CAKE.
THIS RECIPE CAN EASILY BE HALVED TO MAKE A SMALLER CAKE - Add all ingredients into the thermomix bowl and mix speed 5 for 30 seconds.. DONE!
- 1) Place one cake layer onto your cake serving plate
2) Add a layer of cream cheese icing
3) Place the second layer ontop of the first layer
Continue for rest of layers
4) Cover the rest of the cake with cream cheese icing
5) Decorate as needed

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Very tasty and quite simple, nice texture and good for decorating.
This cake is pleasant..... more like a vanilla cake than a white chocolate mudcake. I was wanting a nice dense cake but this is really quite light and fluffy and I don't get the chocolate flavour.
It may have been my baking - it doesn't state the temperature in the recipe so I did mine on 140'C for about 45 minutes (I halved the recipe as I only wanted one cake)
I also found the icing needed a bit more sweetness - next time I may melt some white chocolate and mix that with the cream cheese for a bit more of the chocolate flavour.
I'm guessing that "flour" is just "plain flour"?
I’ve just seen someone’s picture of this cake and looks amazing! She said:
“I cooked on 140'C for 1hr 40mins, they are 6 inch tins. The wet tea towel wrapped around and the lower temp helps keep the top flat.“
I thought I’ll share this as it’ll help me for when I make it lol

For anyone interested, i just mixed this up in my TM31. Just fit In the oven now - following the suggestion of 170*c, so will see how it goes. The batter tastes divine, so i am excited!
Are you supposed to mill the raw sugar????
Just baked this cake for my daughter's 21st Birthday and made a 4 tier 6" cake! It was an absolute hit! All guests loved it and it was great. I also baked at 170* and used the butterfly like ReneeNguyen suggested.
