  • 1 tsp vanilla essence
  • 35 grams Corn Flour
  • 35 grams custard powder
  • 200 grams plain flour

Recipe's preparation

  1.  

    Pre-heat oven to 180°. Line biscuit tray with baking paper.

    Mill Sugar 30 seconds Speed 10

    Scrape sugar off lid and from sides of bowl.

    Add butter and vanilla and mix 1 minute speed 4

    Add flours and custard powder mix 20 seconds speed 4 or until mix is just combined.

    Roll into small balls place on tray and flatten with a fork, dipping the fork into a cup of water will stop the mix from sticking.

    Bake for approx 15-20 until a pale golden colour,

     

    Makes approx 35 depending on size.

Tip

 

For a super fine texture mill sugar once and allow to cool down for 1 minute then mill again for another 30 seconds on speed 10.

    I made these for a baby shower and they didn't last long at all.  I filled them with a buttercream icing and sandwiched them together.  seeing as my oven bakes a little on the hot side I'll just have to decrease the temp and do them a little shorter.

    WAY TOO GOOD.

    These are so good, they look amazing & taste even better than they look. They have not lasted long in the fridge. So I always have to double this recipe to get enough melting moments to last at least a few days.

    I have made these a fair bit & have filled them with both plain & passionfruit filling.

    Plain filling - 100gms butter, 150gms icing sugar, 1/2 teasp vanilla paste. mix all for 10-20secs on sp 4.

    Passionfruit filling - 60gms butter, 1 passionfruit, 120gms icing sugar. mix all 1min,reverse,sp 6. Although I add extra passionfruit for a more intense flavour & I found had to double this recipe to fill biscuits as I like more filling.

    Lovely and makes a great quantity. I needed to reduce the oven to 160 fan forced and only 10 minutes cooking time. Thanks for sharing.

    Kirrilee, thank you for sharing this recipe - so easy and perfect.  I used less butter (purely because I ran out and the biscuit still got the thumbs up).

    I suggest to use the butterfly when creaming butter and sugar and use a bit more plain flour, may me 20g more.
