Ingredients

Never fail Chocolate Mud Cake

  • 200 grams dark chocolate, roughly chopped
  • 250 grams unsalted butter, roughly chopped
  • 1 tablespoon instant coffee
  • 100 grams Milk
  • 250 grams self-raising flour
  • 50 grams cocoa
  • 250 grams caster sugar
  • 1 teaspoon vanilla extract
  • 150 grams sour cream
  • 4 eggs, lightly beaten

Recipe's preparation

  1. 1. Grease and line 23cm springform cake tin, preheat oven to 160C.

    2. Add chocolate to TM bowl and grind for 10 seconds / speed 10.

    3. Add butter, coffee and milk to TM bowl and melt with chocolate for 4 minutes / 50 degrees / speed 2.

    4. Add remaining ingredients, except for the eggs, and mix for 20 seconds / speed 6. Scrape sides of bowl with a spatula and loosen cake mix.

    5. Add eggs and mix for 20 seconds / speed 6. Mix batter with spatula and mix for an additional 15 seconds if required until the mixture is silky smooth.

    6. Pour the batter into the prepared cake tin and bake for approximately 60 minutes, or until a skewer place into the centre of the cake comes out with some moist crumbs sticking to it - but no raw cake batter.

    7. Allow cake to cool completely in the tin.

    8. Remove cake from tin, spread with TM ganache, ice as required and serve.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This is a really good chocolate cake. I wouldn't say mine turned out like a rich mud cake but overall it made a great birthday cake with chocolate buttercream icing.
