Nut Free Muesli Bars
- 50 grams Cold-pressed extra virgin coconut oil
- 90 grams Organic Rice Malt syrup, I prefer Pure Harvest brand
- 80 grams tahini
- 1/4 tsp sea salt
- 150 grams sunflower seeds
- 150 grams Peppitas
- 2 tablespoons chia seeds
- 60 grams coconut flakes, Unsweetened are preferred
- 50 grams dried fruit of choice

- This recipe can be consumed raw (soft and chewy) or baked (firmer with a little more crunch). It's a fabulous energy booster and sugar free treat (except for small amount of sugar in dried fruit, which can be optional if you prefer)
1. Preheat oven to 140'C
2. Add coconut oil, rice Malt syrup, tahini and salt into "Closed lid" and heat 3min/50 C/speed3 until all ingredients are melted and well combined. Extend heating time by 1-2 minutes if necessary as time may vary depending on your climate and the original consistency of oil and syrup etc
3. Add sunflower seeds, peppitas, chia seeds, coconut flakes and dried fruit to "Closed lid" . Mix 10secs/speed 4/"Counter-clockwise operation" . Scrape down sides and mix for an additional 10secs/speed 4/"Counter-clockwise operation" until all ingredients are well combined.
4. Transfer mixture into a lined slice/baking tray and press firmly, the more force the better.
5. Place tray into preheated oven and cook for 10-12 mins or until the slice has started to brown a little on the top. Allow to cool completely in the tray before transferring to a chopping board.

For raw option, place tray into the fridge to set well.
6. Slice into 12 muesli bar sized portions (can cut into smaller squares to achieve more individual serves)
7. Both raw and baked versions keep best refrigerated so as to maintain firmer bars

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
