Ingredients
Loaf Mixture
- 200 grams almonds
- 50 grams Shredded coconut
- 3 ripe bananas
- 50 grams coconut oil
- 3 eggs
- 80 grams rice malt syup
- 1 level teaspoon vanilla extract
- 1 level teaspoon ground cinnamon
- 80 grams Arrowroot
- 1/2 level teaspoon Bi Carb Soda
- Flaked almonds and shredded coconut for sprinkling

Preheat oven to 180 degrees C. Line a loaf tin and set aside.
Mill almonds and shredded coconut 6 sec/speed 8. Set aside.
Place bananas and coconut oil into mixing bowl and mash 5 sec/speed 5.
Add eggs, rice malt syrup, vanilla and cinnamon 5 sec/speed 4.
Add arrowroot, bi carb and almond/coconut mix and stir 10 sec/speed 4 or until just mixed through.
Pour into prepared loaf tin and bake for 50-60 mins or until skewer comes out clean.
Optional - sprinkle with flaked almonds and shredded coconut before baking.

This banana loaf can be enjoyed fresh or toasted.
