Ingredients

Cashew Coconut Yogurt

  • 100 grams Raw Cashew Nuts
  • 30 grams dessicated coconut
  • 2 level tsp vanilla essence
  • 4 dates
  • 155 grams ice cube
  • 2-3 level tablespoons arrowroot flour
  • 1 level tsp agar agar powder
  • 900 grams water

culture

  • 40 grams yoghurt, left from previous yogurt
  • 1 heaped teaspoon Tamrind Paste

Recipe's preparation

    Make Cashew coconut milk
  1. Place cashews, dates, coconut and vanilla into mixing bowl and start. Blend 30secBlend"Blend"

  2. Add ice cubes and start Blend 30secBlend"Blend"

  3. Add water and Blend 4mins.Blend"Blend"

  4. Add arrowroot and agar agar.Gentle stir setting"Gentle stir setting"

  5. Heat Base to 85c. For 10mins.
    Then cool.
    Wait for temp to come to 40 to 45c.
    Then add Tamrind, and reserved yogurt.
    Blend"Blend" Mix briefly
    Pour into thermo serve and put in oven with light on over night.
    Or hot water cupboard.

  6. Transfer to a steralised jar and refrigerate for 6 hours.
    If not thick enough you can add some chia seeds which thickens and adds omega 3s.

Tip

You can experiment with Arrowroot and agar agar powder to see how thick you want your yogurt.
