Paleo Blueberry Coconut Muffins
- 150 grams raw cashews
- 1/2 teaspoons GF baking powder
- 1/2 teaspoons Bi Carb Soda
- 1/4 teaspoons Himalayan salt, (fine not flakes or rocks)
- 60 grams Shredded coconut
- 3 eggs
- 100 grams honey
- 1 teaspoons Vanilla Bean Paste
- 40 grams coconut oil, (melted works best)
- 80 grams fresh blueberries

Preheat the oven to 180 degrees and grease a muffin tray.
Place the cashews in TM bowl and mill 10sec / sp10
Scrape down the sides of the bowl
Add in the baking powder, bi-carb, salt & shredded coconut and mix 10 secs / reverse "Counter-clockwise operation" / sp 2
Add in eggs, honey, vanilla bean paste, coconut oil (soft/melted) and mix 10 secs / reverse "Counter-clockwise operation" / sp 4
- Pour into the muffin trays
- Distribute the blueberries into the mixture by hand. You can place into the mixture in the TM bowl, but they seem to sink to the bottom of bowl when pouring out and they don't work as well.
- Bake for 15 to 20 mins
Tip
You can also use Maple Syrup if you don't want to use Honey. You can use this exact recipe in TM 31 as well.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
