Paleo brownies:
- 20 dates, pitted
- 1/2 cup coconut oil melted
- 6 eggs
- 6 tab. Maple syrup/honey/rice malt syrup
- 1+ 1/2 tsp vanilla extract/paste
- 1/2 cup Cocoa or Cacao
- 4 heaped tablespoons Tapioca or arrowroot starch
- 1 tsp ground ginger
- 2 tsps cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 pinch salt
- 1/2 cup Pecans or macadamia (optional), Roughly chopped

Preheat oven to 180 degrees.
place pitted dates in bowl and turbo ins short bursts until the dates begin to bind together.
Add melted oil, eggs, molasses/honey/rice malt syrup and vanilla to the bowl and process Speed 5, 10 - 15 secs, until smooth.
Add cocoa/cacao powder, tapioca/arrowroot starch , spices, baking powder, bicarbonate and salt and process Speed 6, 10 secs. Until completely combined and smooth.
(Optional - Add nuts and stir "Counter-clockwise operation" for 10 secs, Speed 1)
Grease a glass rectangle baking dish with butter or extra coconut oil, pour mixture into dish and smooth.
Bake for 35 mins. Test with wooden skewer - can come out slightly soft, but not gooey!
Cool 10 minutes before cutting.
Top with double cream or whipped coconut cream.
Tip
Not for everyday - but a great treat for Paleo/Primal special occasion desserts.
Coconut flour can be substituted for tapioca/arrowroot starch using 4 scant tablespoons.
