Paleo Friendly Chocolate Brownies
- 450-650 grams sweet potato
- 2 eggs
- 2 tablespoons almond meal/flour
- 128 grams cocoa powder
- 2 teaspoon vanilla extract
- 64 grams dark choc chips
- 64 grams honey
- 64 grams olive oil
- 1.5 teaspoons baking soda

Fire up your Oven or BBQ to 190°C / 375°F.
Grease and line a 20 cm / 8 inch cake tin.
Peel and roughly chop up your sweet potato.
Put the sweet potato in the thermo jug pulse 2 times for a second each, this should be enough to shred the sweet potato.
Add all the other ingredients except for the choc chips and mix well for 40 Sec, SP 3
Once all mixed through add the choc chips and mix for 10 Sec, SP 3
Pour into prepared tin.
Sprinkle over some extra choc chips and place in oven / BBQ for 30-35 min or until the centre is cooked though.
Rest for 10 min before turning out and slicing.

These didn’t set for me. I cooked for double the time and still didn’t set. Wouldn’t make again.
I just looked up a nut free alternative to almond flour (our school is nut free) and found this! make ur own suflower seed flour and use it 1:1.

I used 70g of cacao powder as I felt over 100g a bit excessive. Next time I'd probably reduce the cacao powder to 60g. I used rapadura in place of the honey and it still worked out beautifully.
I used rice malt syrup instead of honey. Great recipe!!
Really nice. I used coconut oil as I didn't have coconut oil. Used raw honey, instead of honey. Not dry at all. Very moist.
