- 4 egg whites, Room temperature
- 1/4 tsp cream of tartar
- 140 g honey

- 1. Preheat oven to 200C (or skip if using blow torch)
2. Pop a small dish on top of assembled bowl and weigh 140g or so of honey. If it's too thick you might need to warm it in the microwave for 15 seconds, just to ensure it's easily pourable. Set aside
3. Insert butterfly. Place egg whites & cream of tartar into mixing bowl and whip 3-4 minutes/50C/speed 3.5, until soft peaks have formed.
4. with butterfly rotating 4 min/50C/speed 3, slowly pour in honey through the hole in the mixing bowl. Little by little!
5. Spread the meringue over whatever you're using it for (mine was for a lemon meringue) or dollop our over a lined baking tray to make little meringues.
6. Bake for 3-5 min until meringue is lightly browned (mine pictured was 5). Or use a kitchen blow torch to brown the edges. Remove from oven and allow to cool (approx 30 min).
Tip
Italian meringue is prepared very similarity, just heat your honey up more till it's hot (not boiling).
I've seen similar recipes use up to 180g honey, so feel free to add more if you need it.
