Pistachio Blondies
- 1/2 level tsp baking powder
- 1/2 level teaspoons salt
- 120g plain flour
- 120g brown sugar
- 80g white sugar
- 170g unsalted butter
- 2 eggs
- 2 level tsp vanilla extract
- 200g White Chocolate Chips
- 200g Pistachio cream

- Add 120g Brown Sugar 80g White Sugar to Bowl and mix 10 sec/speed 9
Add 170g Unsalted Butter to bowl and mix 10 sec/speed 8
Insert Butterfly Mixer and cream butter and sugar for 3 min/speed 3 until pale in colour
Add 2 Eggs and 2 tsp Vanilla Extract, mix 1 min/speed 4
Remove Butterfly whisk and scrape down sides of mixing bowl
Add 215g Plain Flour, 1/2tsp Baking Powder, 1/2tsp Salt to bowl. Mix 20 sec/speed 3
Scrape down sides and mix 10 sec/speed 3
Add 200g White Chocolate Chips and 200g Pistachio Cream to bowl and mix 10 sec/speed 3 until combined
Pour into prepared baking pan and place in the oven at 160(fanforced) for 30-40min or until golden brown on top and a toothpick comes out clean.
