Ingredients
Pancakes
- 150 grams Whole or Quick Oats
- 2 eggs
- 270 grams Pot Set Greek Natural Yoghurt
- 30 grams Raw Honey
- 30 grams Milk
- 1 tsp vanilla essence
- 1/2 tsp baking powder
- 1/4 tsp Bi-Carb Soda (Baking Soda)
- 1/4 tsp organic apple cider vinegar

1. Add your oats to the bowl and blitz on speed 9 for 10 seconds
2. Now add all your other ingredients and blitz for 5 seconds speed 5.
3. Scrape bowl down, and blitz again for 5 seconds speed 5.
4. Pour Mixture into a 500mL capacity pouring jug or bowl, and allow to STAND for at least 10 minutes to thicken (it should go from liquidy, to spoonable)
5. Heat a non-stick frypan on a medium to medium low heat, and rub with a scant amount of butter. Pancakes like this need to be cooked low and slow.
6. Add rounded dessert size spoonfuls into your pan, and cook with a LID ON for 2 minutes.
7. Flip pancakes over, (they should start to look slightly dry on the top surface) and cook without the lid for another 2 minutes
Serve with your favourite Jam or Honey.

Tip
Because of the Oats and Honey, these pancakes can easily over brown.....don't have your heat too high to begin with.
These pancakes are so amazingly good for you, full of fibre, protein, good fats, and enough carbs to get your little ones out the door and out to play for the whole morning. Enjoy.
