Batter Mixture
- 120 g Butter
- 300 g SR flour
- 130 g castor sugar
- 180 g Milk
- 2 eggs
- 1 tsp vanilla essence

Pre-heat oven to 190deg.
1. If using raw sugar, mill it now for 5secs, speed 4 - set aside.
2. Melt butter 1 minute, 60deg, speed 3 - or until just melted.
3. Add flour, sugar, eggs, milk & vanilla
4. Mix for 10secs, speed 4.
5. Spoon into cupcake patty pans using a tablespoon & teaspoon, approx 1 tablespoon in each. I sit the patty pans in muffin trays, this help keep a nice shape
6. Bake for 10-12mins, or until just firm to touch. Keep an eye on them after 10mins - you don't want to overcook & dry them out!
7. Icing with your favourite icing, or fill with jam and cream.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. I used this recipe again to make this princess castle cake for my daughter.
This is dairy free using nuttelex and almond milk. I use a little more milk than what the recipe above states. I also add in a teaspoon of baking powder to help my sr flour rise. This was four and a half batches of the recipe to construct this cake. One double batch I made into chocolate cake by adding 2TABS of cocoa powder, 2TEASOONS jam and extra milk. Birthday girl loved it 💖
This recipe has featured again this year for our children’s birthdays.
We are still dairy free so I substitute with almond milk and nuttelex. But we have progressed onto baked egg so no more egg replacer.
I made 11/2 batches of this recipe for this cupcake pull apart croc. Half the mixture I added cocoa power and extra milk to make chocolate 😜

Lovely and light patty cakes! I added a little extra milk but eggs may have been in the small side.
