Ingredients

Cookie Dough

  • 40 grams sugar-free chocolate
  • 125 grams unsalted butter (softened)
  • 125 grams dextrose
  • 1 teaspoon vanilla essence
  • 1 egg
  • 125 grams plain flour
  • 65 grams cup self-raising flour
  • 40 grams cocoa powder
  • 1/2 teaspoon Bi-carbonate of Soda

Recipe's preparation

    Preparation
  1. Pre-heat the oven at 170 degrees (150 fan-forced).

    Grease loaf tin with butter or olive oil.

  2. Cookie Dough
  3. Add the chocolate to the bowl and chop for 10 seconds on speed 6.

    Remove from bowl and set aside.

  4. Insert the butterfly, add butter, dextrose and vanilla to bowl and whip for 30 seconds on speed 3.5.

    Scrape down sides of bowl, and repeat 3 times (2 minutes in total).

  5. Add the egg, whip for 30 seconds on speed 3.

    Remove the Butterfly, scrape down sides of bowl.

  6. Add the plain flour, self-raising flour, cocoa, and bicarbonate of soda and mix for 2 minutes on speed 2.5.

    Add the chopped chocolate, press reverse and mix on speed 1 for 30 seconds.

  7. Baking
  8. Roll 1/2 tablespoon fulls (for small cookies or tablespoon for large cookies) into balls and place on baking tray leaving 2 - 4 cm space between them.

    Bake in oven for 10 -12 minutes.

    Remove from oven and allow to cool on tray for 5 minutes before transferring to a cooling tray to continue cooling.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Thanks for a great dextrose baking recipe! I noticed after I baked them that it's from a David Gillespe recipe, so that's made me even happier.

    i just need to test them on my husband and children who don't really like dark chocolate, but I don't see how they couldn't like them - delish!

    I used this as a base recipe for my own version, as I didn't have any dextrose, so had to use other substitutes & the result went down really well! Thank you for this version!
