Ingredients

Muffin Mix

  • 200 grams plain flour
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon cinnamon
  • 160 grams sugar
  • 60 grams cooking oil of choice
  • 1 egg
  • 200 grams Milk
  • 100 gram Natural Plain Yogurt

Topping

  • 1/4 Cup of Sugar
  • 1/4 teaspoon cinnamon
  • 50 grams melted butter

Recipe's preparation

    Muffins
  1. Add flour, baking powder, salt, nutmeg, cinnamon and sugar to TM Bowl.  Mix speed 5 for 5 seconds.  Set aside in separate bowl.

    Add oil, egg, milk and yougurt to TM Bowl.  Mix for 5 seconds on Speed 5.  Add dry ingredients to wet mixture in TM Bowl.  Mix for 5 seconds on Speed 5 to combine.

    Pour into lined Muffin Trays and bake at 180 degrees for 20-25 minutes.

    While muffins are hot, brush on butter, then dip into cinnamon sugar mixture.

  2. Topping
  3. Combine sugar and cinnamon in small bowl.

    in seperate bowl Melt butter 

    When muffins are removed from oven and hot, brush each one with butter, then dip in cinnamon/sugar mixutre.

    What is the purpose of the yogurt. This was not in the original recipe. There was only 240 grams of mik and no yogurt. Just curious if this is a new recipe or it has been adjusted.

    Simple and tasty. I made this as a cake in a rectangular baking dish and it turned out really well! I baked it for about 40 minutes, brushed the top with butter and sprinkled with cinnamon sugar after baking. I halved the sugar and used half wholemeal flour. The texture is light and fluffy, and the flavour is lovely and subtle. Thank you for a winner!
