Ingredients
cake mix and topping
- 200 grams Butter
- 400 grams sugar
- 1 tbsp honey
- 6 --- large plums, eg blood plums or similar sliced lengthways into sixths
- 2 --- large eggs
- 2 tsp Rosewater
- 185 grams self rasing flour
- 120 grams Milk

Place half the sugar (200g) in the thermomix and process 3 sec speed 9.
Add to the jug half the butter (100g) and the honey. Process for 1.5mins, 50 C, speed 3.
Pour this mixture over the base of a 23cm/9" cake tin and arrange the plum slices attractively on top working in concentric circles.
No need to wash the jug, go right ahead and place the remaining sugar in and process as before 3 sec speed 9.
Add the butter and process for 3 sec speed 5
Add eggs, s r flour, milk and rosewater and blend 30 sec speed 5-6.
Pour on top of the plum slices and bake in a moderate oven for about an hour till a skewer comes out cleanly. Allow to cool for about half an hour as the sides will shrink from the tin a little. Run a knife around the edge before inverting onto a serving dish.

Tip
Butter is king in this recipe and there is no substitute. You could play around with the honey and use different flavours like leatherwood honey or ginger honey. You could also substitute the rosewater for vanilla extract.

This is SOOOO good. Ive only made it once to rave reviews and because I have some plums sitting in the fridge, I'm making it again tonight for dessert!
I have this today with an abundance of home grown plums!!!! OMG it's Devine. It's one of those that you take the first mouthful and think OMG... Try it!!
I think tinned plums might be too soft and wet for this recipe. I would use them in a more batter based style of cake or in a blind baked pie crust with a type of custard filling.

I made this late last night to use up plums that I had spare. Wow wow wow!! It was delicious. Very sweet but would have disappeared quicker if it had been cooler. Next time I will make it earlier in the day it may last a little longer!!!! Thank you
